Research Institute of «Food Safety»

“Research Institute of Food Safety” was created in 2011 on the basis of the Research Institute of Food Technologies. The Research Institute of Food Safety tests products according to microbiological and physico-chemical indicators, for compliance with safety requirements (physico-chemical and microbiological tests, quantitative chemical analysis).

The structure of the institute includes two laboratories: the Testing Laboratory “Food Safety” and the Research Laboratory for Assessing the Quality and Safety of Food Products.

By the decision of the National Accreditation Center of the Committee for Technical Regulation and Metrology of the Ministry of Industry and New Technologies of the Republic of Kazakhstan, the testing laboratory “Food Safety” was accredited in the accreditation system of the Republic of Kazakhstan for compliance with the requirements of GOST ISO/IEC 17025-2019 “General requirements for the competence of testing and calibration laboratories” (Certificate accreditation No. KZ.T.02.E 1158 ). The laboratory has installed and maintained a management system, for the operation of which the necessary procedures, programs and instructions have been developed. The Food Safety testing laboratory employs specialists who have received certificates that confirm their qualifications in the quality management system.

RESEARCH OBJECTS OF THE TESTING LABORATORY:

Grain and bakery products, meat, dairy products, fish products, drinks, water and other products of the food industry and agricultural production.

The testing laboratory determines the content of heavy metals, nitrites, nitrates, residual amounts of pesticides, herbicides and mycotoxins, and indicators of oxidative spoilage. A full physical and chemical analysis is carried out: determination of moisture, ash content, sugar, fat, proteins, titratable acids, content of various ions, etc.

Activity

THE INSTITUTE CARRIES OUT:

  • monitoring the quality of raw materials and products during the production process (bread, dairy, meat products);
  • performing certain types of physico-chemical and microbiological analyses;
  • development of regulatory and technological documents for tested and new products;
  • assistance to the educational process in the implementation of experimental work by students, undergraduates, PhD doctoral students;
  • development and improvement of test methods, planning, processing and analysis of experimental results;
  • providing methodological and consulting assistance.

 

DEPARTMENT OF MICROBIOLOGY

The laboratory has a permit to work with microorganisms of groups III and IV of pathogenicity and performs the following types of analyses: determination of bacteria of the group of Escherichia coli, Salmonella, mold, yeast, Staphylococcus aureus, clostridium, the number of mesophilic aerobic and anaerobic microorganisms.

The laboratories conduct research on the chemical composition, biological and nutritional value, as well as safety.

It has permits for working with toxic substances and precursors.

HIGH-PERFORMANCE LIQUID CHROMATOGRAPH «AGILENT-1200»
On the HIGH-PERFORMANCE LIQUID CHROMATOGRAPH “AGILENT-1200” with diode-matrix and fluorescent detectors, the following parameters are determined::

1-aflotoxins B1, B2, M1;
2-benzapyrene;
3-nitrofurans;
4-nicarbazines;
5-malachite green;
6-organochlorine pesticides;
7-herbicides;
8-preservatives;
9-amino acids.

MC 300TX TRINOCULAR MICROSCOPE designed for direct microscopy of drugs, provides the detection of this image on the screen. With the help of the MS300 series trinocular nozzle, you can photograph images.

ATOMIC ABSORPTION SPECTROMETER “KVANT-Z.”»
Designed for elemental analysis of liquid samples of various origin and composition at the level of concentrations measured in mcg/l – ng/l. The main applications of the spectrometer are ecology, food industry, geology, metallurgy, other industries, and scientific research. The device is used for the quantitative determination of:

1-Cu (copper);
2-Al (aluminum);
3 – Zn (zinc);
4-Pb (lead);
5-Cr (chrome);
6-Ni (nickel);
7-Cd (cadmium);
8 – As (arsenic);
9 – Sn (tin).

The TA-LAB VOLTAMMETRIC ANALYZER is used to determine:
— elements Cu, Pb, Cd, Zn by sequential analysis;
— ions of Hg, Ni, Bi, As, iodine and other elements.

The KFK-3-01 SPECTROPHOTOMETER is applied:
— for use in environmental studies, food quality, water quality (drinking, natural, waste water);
— to determine the color, turbidity;
— to determine the content of aluminum, iron, sulfates, phosphates, phenols, nitrites, surfactants, heavy metals (Mn, Cd, Hg) , etc.

ATAGO POLARIMETER is applied
– to determine the concentration of solutions of optically active substances, such as sugar, glucose, starch, protein, by the angle of rotation of the polarization plane.

GAS CHROMATOGRAPH
CRYSTAL 4000M

It is designed for automated physical and chemical studies of a wide range of objects (water, air, food products, etc.). The device is used for quantitative determination of:

– hexachlorocyclohexane
(α, β, γ are isomers);
– DDT and its metabolites;
– hexachlorobenzene (wheat);
– 2,4-D acid, its salts, esters;
– alcohol

The JENWAY SPECTROPHOTOMETER is applied:
– for use in environmental studies, food quality, water quality (drinking, natural, waste water);

– to determine the color, turbidity;

– to determine the content of aluminum, iron, sulfates, phosphates, phenols, nitrites, surfactants, heavy metals (Mn, Cd, Hg) , etc.
