Scientific activity

Science­is one of the priority areas of activity of the department. Teachers conduct scientific work, improve their qualifications, undergo scientific  internships, take part in international scientific conferences, congresses, seminars.

  • Development of technology for specialized products aimed at improving the health of various groups of the population of the Republic of Kazakhstan.
  • Research and development of technology  dairy products for baby food 
  • Scientific rationale for processing modes of melons and melons into shelf-stable products
  • Research and development of technology for fermented milk products based on goat milk using plant raw materials
  • Study of the economic and biological characteristics of highly productive cows in the conditions of breeding farms in the Almaty region.
  • Creation of complex, energy- and resource-saving innovative technologies for processing raw materials of plant and animal origin

Development of modern technologies for the production of functional food products using nano- and biotechnologies to prevent various diseases, and strengthen the body’s protective functions, reduce the risk of exposure to harmful substances, including for environmentally disadvantaged regions

  1. Development of technology for new food products for various age groups of the population (baby food, preschool, school gerodietetic, etc.) based on modern food design methods
  2. Development of technology for national meat and dairy products from traditional and non-traditional raw materials of animal origin
  3. Development of technology for meat, fish, dairy, canned products and food concentrates of increased biological and nutritional value.
  4. Development of innovative technology for dairy products using new consortia of microorganisms and biologically active substances
  5. Development of modern technologies for the production of functional food products to prevent various diseases and strengthen the body’s protective functions, reduce the risk of exposure to harmful substances, including for environmentally disadvantaged regions
  6. Development of modern equipment and technologies for processing raw materials and producing food products to extend their shelf life
  • Biotechnology of dairy products of increased nutritional and biological value using additives of plant origin, bacterial cultures and associates (fermented milk drinks, pastes, soft and pickled cheeses).
  • Improving the technology of Kazakh national meat products from horse meat, camel meat, lamb.
  • Studying the possibility of using non-traditional plant raw materials in the production of canned meat and fish.
  • Study of changes in the process of heat treatment of national bakery and culinary products.
  • Control and ensure the biosafety of products and raw materials of animal origin.
  • Study of the functional and biocorrective characteristics of protein plant-animal complexes and the development on their basis of a technology for national meat products of a new generation using local raw materials
  • Development and implementation of national technologies for deep processing of farm animal milk (cow, goat, sheep, mare, camel milk)
  • Research of biological, toxicological, radiological, chemical and physical risks during the life cycle of food products (methodology for identifying, assessing and managing hazards in food production)

Based on the results of scientific research over the past 3 years, the teaching staff has published about 400 scientific papers, including more than 142 reports at international practical conferences, 5 monographs, 33 textbooks and teaching aids, more than 50 works were published abroad, of which 39 articles in journals indexed in Scopus and Clarivate Analytics. 32 patents were received, 7 developments were put into production.  For the last time  5  Over the years, 41 gold and 7 silver medals and 6 honorary diplomas have been received at the prestigious International Exhibitions “Dairy and Meat Industry”, “Agroprodmash”, “Golden Autumn”, Russian Federation, Moscow.
